From September 20 to 24, the MayaBay restaurant in Monaco will offer a unique culinary experience. For this exceptional event, renowned Chef Dylan Jones, co-founder of Bo.lan, a Michelin-starred restaurant in Bangkok in 2017, will be present to share his expertise and passion for authentic and sustainable Thai cuisine.
During these few days, guests will have the opportunity to discover Chef Jones’ signature dishes, which blend tradition and innovation while adhering to a culinary philosophy focused on sustainability. The featured dishes will prioritize organic products, carefully selected to encourage environmentally friendly farming practices. Seafood will come from sustainable and wild fisheries, ensuring the preservation of healthy fish stocks. This commitment to ethics and quality is at the core of the chef’s culinary philosophy.

This event will also mark a unique meeting between two great chefs. Dylan Jones will collaborate with Christophe Dupuy, the talented Executive Chef of MayaBay. Together, they will offer a sensory journey through unique culinary creations, reflecting their shared passion for excellence and the transmission of gastronomic heritage. Biography of Chefs Dylan Jones and Bo Songvisava
Chef Dylan Jones, originally from Canberra, Australia, began his career in his hometown before continuing his training in Melbourne, and later honing his skills at the famous Nahm restaurant in London. It was there that he met his culinary and life partner, Bo Songvisava, a talented chef with a degree in gastronomy from the University of Adelaide, Australia. Together, they founded Bo.lan in Bangkok in 2008, a landmark restaurant for authentic and sustainable Thai cuisine.

Bo.lan quickly gained international recognition, earning a Michelin star in 2017 and a spot in Asia’s 50 Best Restaurants. In 2012, the duo launched a second restaurant, Err, offering a modern take on Thai street food. Chef Bo was also named Asia’s Best Female Chef in 2013 and shares her passion for cooking through a weekly television show in Thailand. In 2023, the chefs reached a new milestone in their international careers by opening restaurants in Kyoto and Dubai.
